Paella Recipe by Food Adventura

It is our great pleasure to offer you this recipe and help you to re-create what you experienced with our paella catering experience. Cooking paella on a Sunday afternoon with friends around is the ultimate relaxing experience.

The key elements are the ingredients! Use good quality paella rice, fresh seafood and the most important an excellent chorizo.

Paella Mixta for 6 persons

Ingredients
Olive oil for cooking
12 chicken wingettes
500g sliced good quality chorizo
500g sliced fresh calamari
12 mussels
12 king prawns peeled, keep heads and tails for extra flavours
3 garlic cloves finely shopped
1 large onion diced
1 red capsicum diced
1 green capsicum diced
1 Tbsp smoked paprika
1 pinch of saffron
2 Tbsp tomato paste
1.2 litre of chicken stock
500g Paella rice
1 lemon cut in wedges to finish paella
Salt & Pepper

Method
Heat about 5 mm of oil in a 40 cm paella pan over high heat
Fry the prawns with 1 clove of garlic until coloured on each side and set aside
Add the chicken wingettes, season with salt and the pepper and cook until browned. Remove from the pan.
To make the sofrito, add the onion, garlic, tomato paste and diced capsicums to the pan and cook until softened and slightly browned.
Add the chorizo and calamari cook for 7 minutes.
Return the chicken in.
Mix everything together.
Taste and season salt, pepper & paprika – With salt (up to 1 tbsp) the mix must be over salted before adding rice.
Add the rice and gently spread over the pan
Add the saffron on top of rice and stir for 30 seconds until rice colour have changed to red.
Make sure the mix is perfectly flat and even everywhere in your paella pan!
Add the stock about 2cm above the rice and simmer for 10 minutes.
While there is still a layer of stock on top of the rice, arrange the prawns and mussels
Continue simmering until the stock has evaporated and the seafood cooked.

Chef tips! You can cover with foil to accelerated the process and use less stock.

While the rice is still slightly firm, increase the heat to high, and cook for 2 minutes until you hear the base of the pan sizzling to create the soccarat (brown crusty bottom) on the paella.

Turn off the heat, squeeze over half the lemon and garnish with lemon wedges.

Cover with a clean tea towel and rest for 10 minutes before serving.
